Ingredients
- 1 Pack each Mango, Banana, Pineapple & Goldenberry
- 120ml hot water
Colombian Fruit Compote

Method
Pop all 4 fruits into a bowl or kilner jar. Add the hot water. Leave for 2 hours or overnight.
- Serve with whipped cream, ice cream or Pitaya Greek Yoghurt
- Mix with stewed apple, chopped pears and/or spices.
- Delicous served hot or cold.

Ingredients
- Fresh spinach, big handful
- 100g cooked chicken, chopped
- 100g cashews, Sunshine Nut
- 1 apple, 1 avocado, chopped
- Pack Mango & Goldenberry
Mango, Chicken & Cashew Salad

Method
- Lay a bed of spinach leaves
- Add layer of apple & avocado
- Add chopped chicken mixed with cashews.
- Add mango & goldenberry, dried or rehydrated to taste
Toasted cashews are particularly delicious, healthier unsalted. Also great with almonds.

Ingredients
- 375g Greek Yogurt
- 2 Packs Dried Pitaya
- 1 teasp coconut oil or essence
Pitaya Greek Yoghurt

Method
Stir coconut oil into Greek yoghurt. Pop pitaya into yoghurt. Stir to break up pitaya. Leave for 2 hrs or overnight. Stir till pitaya is completely mixed into yoghurt.
Makes a luxurious alternative to whipped cream or ice cream.
